&lt;br/&gt;Is it fairly easy to find ladies in Morocco that will do henna tattoos?
&lt;br/&gt;What about purchasing henna powder?  I keep reading what great henna work can be done w/ Moroccan henna so I want to purchase some while I'm there.

&lt;br/&gt;anyone interested is welcome to join the newly revived Isabelle Eberhardt tribe.
&lt;br/&gt;
&lt;br/&gt;Isabelle Eberhardt, fluent in Arabic from an earlier stay in El Oued with her mother, travelled alone, a lot of the time in the disguise of a young male Arab, through Morocco and Algeria during the start of the 20th century, from around 1899, calling herself Si Mahmoud Essadi, and people believed her. She got married to an Algerian soldier on the way...and died in a flood at the age of 27. What is left of her are her writings...

      <title>Eid el Fitr and travelling in Morocco</title>

&lt;br/&gt;
&lt;br/&gt;A friend and myself are trying to plan and book a trip to Morocco this year.  
&lt;br/&gt;We are looking at two times, either June 21 to July 4 or Sept 20 to Oct 3.
&lt;br/&gt;
&lt;br/&gt;I know that Sept 20 would be right at the end of Ramadan and beginning the Eid celebration.
&lt;br/&gt;I read on another webboard that travelling at this time in Morocco would be difficult because lots of families are out travelling and it's hard to get a bus ticket or grand taxi.
&lt;br/&gt;
&lt;br/&gt;Has anyone else run across this?
&lt;br/&gt;I'd hate to get over there and not be able to get around because everything is book.
&lt;br/&gt;
&lt;br/&gt;All suggestions welcome!

I don´t know much about Morocco or being there itself, I know all the cautions of being a woman in a 3rd world apply, but I wasn´t sure if that was extra intense here, moreso than other places.       <title>Morocco in August- some questions</title>

      <description>&lt;div&gt;Hi!  I posted this in World Travellers originally, and someone suggested that I come over here with my questions.  If anyone can give me some advice, I'd really appreciate it.  Reading other posts has me really excited about visiting Morocco, but I want to make sure I'm properly prepared, you know?
&lt;br/&gt;
&lt;br/&gt;Basically, the boyfriend and I are thinking about adding a trip to Morocco to our European travels, seeing as how we'll be so close while in Southern Spain. I read earlier posts about safety/reception as Americans/etc, which was reassuring, but I have a few questions of my own that I'm hoping someone can answer.
&lt;br/&gt;
&lt;br/&gt;1. The weather. Everything says it's horrendously hot there in August (when we would be travelling) but how hot is horrendously hot? The Lonely Planet book says up to 105 F. Sound about right? I'm pretty okay with heat, so long as it's dry but I'd like to know what I'm getting into. If it helps, I found India in May and June just fine.
&lt;br/&gt;
&lt;br/&gt;2. Where to go? We're thinking about taking the ferry to Tangiers, then heading to Casablanca, then Marrakesh, then flying back to London. I'd love to get out of the big cities but don't know where else to go. I've looked in the guidebook but it's kind of daunting, and I'd love any personal rec's people might have. We only have a week at most too, so we're trying to keep travel time down, as possible.
&lt;br/&gt;
&lt;br/&gt;3. Interracial relationships. My one concern, re: reception, is that my boyfriend is Mexican and I'm white. Some of the stuff in the guidebook warns against both mixed and unmarried couples, esp if one party is/appears to be Moroccan. He could pass as such, and we're clearly not married. Anyone have any experience with this? Am I being silly?

      <title>Trip Update</title>

      <description>&lt;div&gt;OK.  So we are splitting our time between Spain and Morocco this go round.  We'll be in Fes 04/23 - 26, then on to Marrakech 04/26 - 30.
&lt;br/&gt;
&lt;br/&gt;Any ideas on a good place in Fez?  The only affordable place I found online was booked.  The owner gave me a number of another good place, but I think she made a typo as it wasn't right.  There's always the Ibis hotel I guess.  It did look nice, but I wanted to stay in the Medina.  A hotel just seems so boring in such a wonderful place.  We need 50 euros or less per night.
&lt;br/&gt;
&lt;br/&gt;Yeah, yeah, I know there are tons of places that you can just walk up to and find lodging, but after traveling from Sevilla, to the ferry, then on the train, I don't wanna have to hunt for a place.

I WILL BE IN MOROCCO FOR 10 DAYS AND FOR THE REST OF MY TRIP I WOULD LIKE TO FIND SOMETHING BRIGHTER AND MORE FULL OF LIFE AND MORE OF THE MOROCCAN STYLE I DON'T KNOW OF ANY GOOD HOTELS SO I WOULD LOVE SOME HELP IN FINDING ONE. I WILL BE IN CASABLANCA THEN I WILL GO TO MARRAKESH FOR A FEW DAYS THEN OFF TO RABAT TO MEET THE PARENTS OF MY LOVE.       <title>Banquettes in America?</title>

      <description>&lt;div&gt;I have been interested for some time in furnishing a room in my home "á la Moroc".  If I was in Marrakech, I'd talk to a local carpenter who would come to measure my room and then make banquettes to fit it.  Probably I'd negotiate with a cushion maker to select upholstery fabric for the cushions and pillows.  I know I'd want mine stuffed with wool.  Then I'd go around the corner to the metalworkers souk to choose a couple of big hammered platters to set up on table stands in the corners of my banquette-lined room.  I'd hand a couple of lamps, put some rugs on the floor and voila!
&lt;br/&gt;
&lt;br/&gt;Here in San Francisco, not so easy.  Lamps are easy enough to find online, as are rugs...but do any of you know of a carpenter who could build me decent banquettes?&lt;/div&gt;

      <title>Planning a Trip</title>

      <description>&lt;div&gt;I thought there might be a Morocco Tribe, and hey look... here you are!  I see one of my San Diego friends, Frank and Erica, met up with some of you as well.
&lt;br/&gt;
&lt;br/&gt;I am planning a trip sometime between mid-April to early May.  I know, not that far away, huh!  I am going with someone who I think would prefer a tour, but I want to get ideas for planning a trip on our own.  My friend isn't a rough it kind of gal so I think camping is out and definitely nothing that involves camel riding, but neither of us require posh accomodations either.
&lt;br/&gt;
&lt;br/&gt;I like to see the sights, but also like to experience more traditional everyday life.  We both dance so would really love to experience traditional music and dancing somewhere along the way.&lt;/div&gt;

&lt;br/&gt;My partner and baby daughter will be moving to Fes in late May. Was hoping you all could offer some advice! We'll be there for 2 years to learn Arabic and write a PhD dissertation.

&lt;br/&gt;Questions...
&lt;br/&gt;
&lt;br/&gt;1. Will customs let you in with a 1-way ticket? (I know we have to leave sporadically, even with a student visa).
&lt;br/&gt;
&lt;br/&gt;2. What are some essential things we should bring?
&lt;br/&gt;
&lt;br/&gt;3. Are there laundromats, etc... or do you hire someone to do the laundry?
&lt;br/&gt;
&lt;br/&gt;4. How much a month--if we are frugal--say, simple 1 bedroom apt. (appropriate for a baby) could we expect to live on in Fes?

      <title>Advice on meeting Parents</title>

      <description>&lt;div&gt;I am taking a trip in the begining of April to meet the parents of my love Kamal. We have been together for almost 2 years and he asked me to marry him and sent me a ring right before New Years. Our relationship has been mostly long distance. His parents are traditional Moroccan Muslims and they have never met me. From what I know about them, his father is very overprotective, Kamal tells him a lie to see me or his father will give him trouble. His mom has talked to me a few times (she can only say hi to me she doesnt speak any english and i dont know hardly any moroccan arabic)but she has never met me. I am so nervous!! They dont know me well and soon they will meet me and find out he plans to move to the U.S. and marry me. I was hoping someone could give me advice on how to make things more confortable on all of us. What can i do to try to gain their trust and love. They will be apart of my family soon and are already apart of my heart as their son is. Thanks for all your help.&lt;/div&gt;

&lt;br/&gt;Our basic insight concerning world peace: any power, any system, any ideology, any organized or centrally controlled religion is by nature oppressive and usurping of the Divine Prerogative, regardless of either the doctrine upon which it is founded or the sincerity of its devotees. Any attempt, political, economic, military, scientific, philosophical or religious, to re-establish a world of knowledge ('ilm), justice ('adl) and mercy (rahmah) in the period stretching between the time of the death of Muhammad, the last prophet, upon whom be blessings and peace, and the appearance of al-Mahdi is ineluctably doomed to fail. 
&lt;br/&gt;
&lt;br/&gt;Our basic insight concerning individual, familial and communal peace: the Prophet said, "You will not have secure faith ('iman) until you love one another and have mercy on those who live upon the earth." He also said, "He who has no mercy will receive none."

&lt;br/&gt;Our recommendation is to seek peace where — and only where — it can be found. We believe, based on direct experience, that anything else is a waste of time."

I guess everybody knew that Eid ul-Adha is celebrated by Muslims worldwide as a commemoration of Prophet Ibrahim's willingness to sacrifice his son (Ishmael) for Allah...etc  and  as for the New Year is an event that happens when a culture celebrates the end of one year and the beginning of the next. Cultures that measure yearly calendars all have New Year celebrations... so the both of this celebrations will be celebrating in the same day and i see all the world will enjoy them, anyhow we are here to talking and to says " happy Eid &amp;amp; happy New year" to all who celebrate that!

&lt;br/&gt;I am an arabic musician (percussion specifically riq, and oud and buzuq, some violin), and a lover of arabic and african culture and language. Is work difficult to find for a musician? I also have a BA in forensic psychology (i know, very different). would this be of any use in morocco?

      <description>&lt;div&gt;Mu husband and I plan to go to Morocco for New Year. I am super exited by the opportunity to see this beautiful country and experience the culture, but i can't decide on how to take this trip. 
&lt;br/&gt;
&lt;br/&gt;I have thought about taking a group trip, this seems easy, safe and reliable, but this option is somewhat limiting. 
&lt;br/&gt;
&lt;br/&gt;I would prefer to have the freedom to go where i please and take my time, but the question is - is it a good thing to do in an unknown country for the first trip? My concerns are:
&lt;br/&gt;
&lt;br/&gt;- how safe is the country for tourists?
&lt;br/&gt;- are there safe/unsafe places?
&lt;br/&gt;- what is locals attitude toward tourists?
&lt;br/&gt;- will i get by with English? ( i also speak Russian, but i don't think it will come handy in Morocco) 
&lt;br/&gt;- what is the reliable means or transportation within and between the cities?
&lt;br/&gt;- I tend to like small local hotels, it is a good choice for Morocco? 
&lt;br/&gt;- Can someone recommend a good route? Most of the tours cover Casablanca, Fez, Marrakesh. 
&lt;br/&gt;
&lt;br/&gt;I will be thankful for any kind of opinion/advice!

      <description>&lt;div&gt;My dance troupe has chorographed a dance to the song, "Blessings" by Solace. We were told by several people that this song is a, "Guedra."  They said that Guedras are used by the people of Morocco for religious purposes, and we should not dance to this song. Is there any truth to this rumor?

      <description>&lt;div&gt;Hello!  I am an aromatherapist and perfumer and am planning a trip to Morocco this winter- alone and am hoping to explore the traditonal perfume world of this country as well as the natural spa and body care traditions. (argan oil, ghassoul clay etc)  I will be going to France as well, so between the 2 countries this will be a pilgrimage of sorts for me. I am drawn to the mountains but am wondering if you could suggest where I should go considering my interests and the time of year that I will be travelling. I am also wondering how safe it is for me to travel as a lone female and if there are any traditons I need to be sensitve to. 
&lt;br/&gt;As well, I am interesed in the nomadic tribes- are there any Tuareg nearby? and would be interested in a camel train experience.  I am not afraid to rough it- just as long as I can eat well, find beautiful fragrant treasures and have an adventure.   what do you think?&lt;/div&gt;

      <description>&lt;div&gt;The foods of Morocco take great advantage of the natural bounty of a country where eating is both a practical and social ritual. The cooks in the kitchens of the four royal cities (Fez, Meknes, Marrakech and Rabat) helped to refine Moroccan cuisine and create the basis for what we know as Moroccan cuisine today. The midday meal is the main meal, except during the holy month of Ramadan, and abundant servings are the norm. The meal usually begins with a series of hot and cold salads which are followed by a tagine, or stew. The heartiest plate, often a lamb or chicken dish, is next, followed by a heaping plate of couscous topped with meats and vegetables. A soothing cup of sweet mint tea is the grace note to this repast. It is not uncommon for Moroccans to eat using the first three fingers of a hand, and to use bread as a "utensil "anyway have someone eating moroccan foods? what do you think about it , by the way have someone been cooking an moroccan food's , at least Harira Soup - it is really easy to cook it in few munites! &lt;/div&gt;

      <description>&lt;div&gt;I found this place quite by accident, but Im glad I did. 
&lt;br/&gt;My bf and I very recently visited Morocco for two weeks, and now that I'm back, I really miss the place. The only way I can describe my feelings is "homesick". We went to Fes, Tangier (or is it really Tanger? Ive seen both spellings), Marrakech and Casablanca. Each city was such a discovery. At first, in each place, we got really frustrated trying to find our way around, getting lost, having to ask for help. But after the first day walking up and down the same streets a million times, we got to know the place, and just as we were feeling comfortable, it was time to move on to the next city. Ive written about the trip in a journal, and Im in the process of putting it online for people to read. 
&lt;br/&gt;I would love to be able to go back to Morocco someday.&lt;/div&gt;

May go see Taroudannt (although it's been 47C there this week!!) and maybe Ourzazate and Ait Ben Haddou and Zagora. But it might be too hot in some of those places next week.&lt;/div&gt;

      <title>A year in Morocco- but two weeks first</title>

      <description>&lt;div&gt;Hello Nice Peoples of Friends of Morocco,
&lt;br/&gt;
&lt;br/&gt;I am planning on going to Morocco for two weeks in August (yup i love the heat) in order to look around and decide where to spend a year there.  I will be spending 09 there and will be looking for a small villa/apt to rent.  This trip will be to figure out where I would like to be - I am thinking Tangiers at the moment - but any advice on other places would be great. 
&lt;br/&gt;
&lt;br/&gt;I will be spending the year brushing up my (pidgeon gulf) arabic and also hope to be writing -so someplace thats not super touristy but not a far from / or in a city.
&lt;br/&gt;
&lt;br/&gt;Any advice and or help with a place to live / make a temporary home would be hugely appreciated.

      <description>&lt;div&gt;I am travelling to Morocco in July.  Visiting Marrakesh, Fez, Meknes, Atlas mountains (any suggestions?), and want to be on the water, too.  Should we do the Med or the Atlantic?  We are more interested in the indigenous culture rather than partying Europe- Tourist style.
&lt;br/&gt;
&lt;br/&gt;I am a composer and singer/musician.  Any brilliant ideas for connecting with the musicians there.  Any specific gathering places?  I would love to learn and make music while I am there.

Do you know anyone I should visit? I like beautiful nature, great food and music, dancing, cool people. I will study dance if I can find someone. So what do you think?       <description>&lt;div&gt; It's been awhile since I was in Marrakesh and I miss it's dusty charms.
&lt;br/&gt;For no particular reason I offer a story of an odd experience had there, for the idle or curious..
&lt;br/&gt; It's an excellent city to get lost in - many streets coil into dead ends where armies of young boys boot old soccer balls around and laugh at the bewildered traveler. Engaged in these very pursuits one day I decided to try to find the Ben Youssef Mosque. This is a place I could hardly hope to enter without I had embraced Islam, but attached to it's 12th century grounds is the Medersa, an Islamic school perhaps 200 years younger than the Mosque, where a foreigner can wander.  This scholarly enclave had operated for hundreds of year only ceasing activities somewhere in the 1960's.
&lt;br/&gt; I hailed a taxi, a very cheap means of travel there, where your cabbie is possibly of higher education attainments than you, only unable to find work in his profession. Initially reluctant to take me near the mosque, brother cabbie eventually consented and took me thru the winding roads and finally into mazes of curving streets between high ancient walls, which narrowed to a footpath. He left his cab behind and led me walking to a tall wooden door dark with age and showing faint glimmers of coiling metal work, implied thru graceful gestures that I owed him a fat tip, and departed. It was the Medersa.
&lt;br/&gt; At this point a small boy approached me and repeated ly said "steel-o" shyly but persistantly.
&lt;br/&gt;Puzzled at first I realized he was saying 'pencil' in french and hoping I would give him one.
&lt;br/&gt;Since I was carrying a nice ball point pen I'd stolen in a bookstore in Paris, (Precisely timed as a man with a rat on his shoulder stepped thru the door - another story), I exonerated myself of this tiny sin by passing the pen to the boy who 'merci'-ed and scurried.
&lt;br/&gt; Now at this point in the year, unusual winds out of the Sahara were bringing scalding air into the city and the days had been baking hot. Everything had slowed to a lazy crawl (altho Moroccans seldom seem hasty folk anyway). But as I stepped thru the doorway I was greeted by almost total darkness and a blessed coolness. As my eyes adjusted i saw an old man sitting near a table with a bowl on it. He gestured to the bowl and I put a few coins into it and walked down a long narrow dark corridor. The old man seemed to have splashed water over the paving stones and the coolness rose from them.
&lt;br/&gt; What happened next is one of the more memorable events of my life. Possibly resulting at least in part from extended travel, alienation, missing sleep and meals, I arrived at the end of the passage and had what some might describe as a psychic or psychotic event. I myself cannot catagorize it.
&lt;br/&gt;The corridor ended at a large wooden gate of intricately carved wood and light from a large open courtyard beyond streamed thru the pierced shapes of the design.
&lt;br/&gt;On first glimpse of this gate, I experienced a shivering rush of intense feeling, and remembered this gateway vividly. It corresponded to a recent lucid dream I'd had - of arriving with one of my friends at a school where another friend was a student, just as the students were taking a break for a meal in the courtyard.
&lt;br/&gt;Both of these friends are well known and loved people from my current life, in the dream they had different identities. As I stood gaping in amazement I realized that the dream was of another dream which was of another dream and so on. I saw all these infinite layers of dreams somehow evoking the view that one has standing between two mirrors with endless reflections of reflections. These layers all seemed folded into each other as a telescope collapses together. Body, emotions, mind, all were caught up in this extremely strong feeling.
&lt;br/&gt; I lost my sense of time of course but found myself passing thru the gate into the courtyard. A quiet gentle space filled with sunlight and the remains of a long dry fountain. Enormous panels of carved wood lined the walls, the cedar wood aged to just this side of the point of crumbling. Doorways led off into various chambers which in turn led to various chambers, eventually to small cells where a student might sleep. All of this was in carved stone and the floor plan was in oddly repeated patterns.. There was not a single soul anywhere in this large building beyond the gate keeper with the exception of a small grey cat which stalked me thru the rooms, never allowing me to approach closely. From time to time I cautiously approached the gate again, always thereby invoking the same sensations altho now considerably less intense. Years later, a photo of that structure still carries a faint echo of the mysterious feeling.
&lt;br/&gt; That I have some deep connection with that location is my undenyable conviction altho what a rationable interpretation might be, I instinctively avoid concluding.
&lt;br/&gt; Those desiring an explanation may arrive at their own, based on their individual wisdoms and insights into human nature and our world.&lt;/div&gt;

      <title>perfume in morocco...</title>

      <description>&lt;div&gt;Hi everyone!
&lt;br/&gt;
&lt;br/&gt;I have never been to Morocco, but know that has a rich relationship with perfumes and oils.  When I eventually go to this beautiful country, can anyone recommend a good area to go to experience this aspect of the culture? 
&lt;br/&gt;
&lt;br/&gt;I am a student of natural perfumery, so ancient culture and its relationship with perfume is facinating to me.  I know there are other obvious places, like India, to explore in this regard, but for some reason, I am drawn to Morocco more.....&lt;/div&gt;

      <description>&lt;div&gt;Hi everyone, I'm new here. I just wanted to ask a question. Some time this year I'll be going on a bellydance/pleasure trip to Morocco. But my teacher has this one stipulation: that all her students basically cover up because according to her, Western women are viewed differently than women living in Morocco. I really have no problem with that. I always believe that when you go to a different country, you should respect the ways and customs of the land. Its just that from everything I've ever read or heard about, Morocco is a very liberal country, almost as much as here (I'm from Montreal). So my question is: is my teacher valid in her assessment or is her view a bit outdated? No disrespect is meant, I just need to be enlightened :)&lt;/div&gt;

      <description>&lt;div&gt;My mom, less than a week into her month-long dream trip to Morocco, tripped while getting off a bus and broke one of her vertebrae.  She is in a hospital in Casablanca, sounds great, and is awaiting med-evac back home for surgery.  Hopefully this will happen very soon.  
&lt;br/&gt;
&lt;br/&gt;Meanwhile, she is running out of stuff to read.  If anyone is in Casablanca and feels like trading some books with her, or even just picking up any english-language newspaper and bringing it over, I'd love to hear from you.&lt;/div&gt;

      <title>Surfing in Morocco?</title>

&lt;br/&gt;certainly, i loved the couscous down there, there is a lot of choice for vegetarians because they use a lot of veggies.
&lt;br/&gt;Was invited to dinner by a Berber family, they offered us homemade bread with honey and olive oil before dinner. So very easy and more than delicious.
&lt;br/&gt;of course I have to mention the mint tea again, how can you not like a culture that celebrates tea that much?
&lt;br/&gt;Love the Berber shoes a lot in all their color variety.
&lt;br/&gt;The henna art they do is simply amazing...&lt;/div&gt;

      <title>I'll be in Morocco Next week...</title>

      <description>&lt;div&gt;and I have still not figured out where to go and how to travel.
&lt;br/&gt;
&lt;br/&gt;I am a seasoned backpacker (travelled to about 50 countries), and am very comfortable driving anywhere and everywhere. 
&lt;br/&gt;
&lt;br/&gt;Now what I'd like help on is whether I should drive or use public transport? What are the cost economics? Adventure diffferences? Practicality? Enjoyability? Accessability? and any other ___ity? ;) 
&lt;br/&gt;
&lt;br/&gt;I will be flying into Madrid. How &amp;amp; where in Morocco do I go to first? How many days/weeks to spend? 
&lt;br/&gt;
&lt;br/&gt;My plan is to go straight to Morocco - spend 2 about 2 weks there &amp;amp; then head back into Spain for another 2 weeks.

      <title>Bastila Recipe: ORIGINAL VS. Amended One</title>

      <description>&lt;div&gt;Bastila (Morocco)
&lt;br/&gt;A Grand Moroccan Pigeon Pie
&lt;br/&gt;
&lt;br/&gt;    Bastila is a huge pigeon pie traditional in Fès, and found throughout Morocco. One Moroccan cookbook starts a recipe for bastila with the instruction that one must have a dada come to the house to prepare it. A dada is a black professional woman cook from Saharan and sub-Saharan Africa employed in bourgeois and aristocratic households in Morocco to this day.
&lt;br/&gt;
&lt;br/&gt;    This recipe is recreated from the cooks I talked to that day. I find the combination of fowl (my idea) that I use in this recipe to be a very close approximation of those plump and flavorful pigeons one can enjoy in North Africa. Of course, if you can find a good quality unfrozen plump pigeon (squab) in your market at a price that won't break the bank, then by all means use them. Before proceeding with the recipe, make sure you have a 16-inch-diameter baking pan and that it fits in your oven. If you have never made bastila before, allow plenty of time, read the recipe several times, and work patiently.
&lt;br/&gt; 
&lt;br/&gt;5  	pounds pigeon or one 5-pound free-range chicken, alternatively, try 2 Cornish hens (3 pounds total), 1 pheasant (1 1/ 2 pounds), and 1/ 2 pound turkey thigh or breast
&lt;br/&gt;  	 
&lt;br/&gt;6 	large garlic cloves, peeled
&lt;br/&gt;  	 
&lt;br/&gt;1 	tablespoon salt
&lt;br/&gt;  	 
&lt;br/&gt;1 	cup samna (clarified butter), melted
&lt;br/&gt;  	 
&lt;br/&gt;1 	pound blanched whole almonds
&lt;br/&gt;  	 
&lt;br/&gt;1 	cup confectioner's sugar, plus more for dusting
&lt;br/&gt;  	 
&lt;br/&gt;1 	tablespoon plus 1/ 4 teaspoon ground cinnamon, plus more for garnish
&lt;br/&gt;  	 
&lt;br/&gt;2 	cups water
&lt;br/&gt;  	 
&lt;br/&gt;1 	tablespoon orange flower water
&lt;br/&gt;  	 
&lt;br/&gt;1 	pound (4 sticks) unsalted butter
&lt;br/&gt;	  	
&lt;br/&gt;1 	large onion, chopped
&lt;br/&gt;  	 
&lt;br/&gt;1 	teaspoon ground ginger
&lt;br/&gt;  	 
&lt;br/&gt;1/2 	teaspoon ras al-hanut
&lt;br/&gt;  	 
&lt;br/&gt;1/4 	teaspoon freshly ground allspice
&lt;br/&gt;  	 
&lt;br/&gt;2 	good-size pinches of saffron threads, pounded in a mortar with a little salt
&lt;br/&gt;  	 
&lt;br/&gt;1/4 	cup finely chopped fresh parsley leaves
&lt;br/&gt;  	 
&lt;br/&gt;1/4 	cup finely chopped fresh coriander (cilantro) leaves
&lt;br/&gt;  	 
&lt;br/&gt;  	Salt to taste
&lt;br/&gt;  	 
&lt;br/&gt;10 	large eggs plus 2 large egg yolks
&lt;br/&gt;  	 
&lt;br/&gt;1 to 1 1/4 	pounds (about 20 to 24 sheets) commercial phyllo pastry (usually 14 x 18-inch sheets, see phyllo pastry)
&lt;br/&gt; 
&lt;br/&gt;1. If you are using chicken, pull off as much fat as possible. In a mortar, pound the garlic and salt together until mushy and rub the fowl inside and out with this paste. Set the fowl aside for 1 hour in the refrigerator.
&lt;br/&gt;
&lt;br/&gt;2. In a large skillet, melt 1 tablespoon of the samna over medium-high heat, then cook the almonds until golden, about 8 minutes, stirring or shaking the skillet almost constantly after the first 4 minutes. Cool completely, then grind in a food processor and mix with the confectioners' sugar and 1 tablespoon of the cinnamon.
&lt;br/&gt;
&lt;br/&gt;3. Put the fowl in a large casserole or stew pot with the water, orange flower water, 1 pound butter, onion, ginger, ras al-hanut, allspice, saffron, the remaining 1/ 4 teaspoon cinnamon, the parsley, and fresh coriander and season with salt. Bring to a boil, reduce the heat to low, cover, and simmer until the meat is falling off the bones, about 3 hours. Remove the birds and separate the meat from the bones and set aside. Discard the bones.
&lt;br/&gt;
&lt;br/&gt;4. Remove 5 1/ 2 cups of the poaching liquid from the casserole or stew pot. Beat the eggs and egg yolks into 2 cups of the poaching liquid. Pour the remaining 3 1/ 2 cups poaching liquid back into the casserole and reduce to a little less than 1 cup over high heat, about 8 minutes. Set aside.
&lt;br/&gt;
&lt;br/&gt;5. Preheat the oven to 425 degrees F. Grease the bottom and sides of a 16-inch round baking pan with some of the remaining samna. Cover the bottom of the pan with a layer of six sheets of phyllo dough, overlapping so some sheets drape over the side of the baking pan. Liberally brush the phyllo with melted samna . Layer another six sheets of phyllo and brush again liberally with samna. Fold the overlapping sheets in and bake until browned, about 5 minutes. Remove from the oven.
&lt;br/&gt;
&lt;br/&gt;6. Sprinkle half the almond-and-sugar mixture over the pastry. Ladle half of the egg-and-broth mixture over the almond-sugar mixture, making sure that none runs over the edges. Arrange the reserved meat from the birds around the entire pie and spread with the glaze made of the reduced broth. Cover with the remaining egg-and-broth mixture, again making sure it does not run over the sides. Cover with the remaining almond-and-sugar mixture and cover with the remaining twelve sheets of phyllo, in two layers, brushing the layers with the remaining samna. Tuck the overlapping edges of phyllo into and under the pie, lifting the sides up gently. Brush the top of the pie with samna. Also brush the sides of pie well with samna where you tucked the phyllo under at the edge of the pan, using up all but 1 to 2 tablespoons of the remaining samna.

&lt;br/&gt;7. Bake until the top of the pie is golden brown, about 15 to 20 minutes. Tilt the pan, spoon out any excess samna, and reserve. Loosen the sides of the pie with a spatula. Place a large buttered baking sheet or 18- to 20-inch pizza pan over the top of the baking pan and invert the pie in one quick motion. Given the size of the pie pan, this will seem like madness, but try not to be intimidated--hold really tight and flip very quickly and you'll do fine. Practice the movement with an empty pie pan filled with some books a couple of times before doing it and absolutely do not hesitate when you do this. Return the pie to the pan by sliding it in quickly from the platter or sheet, brush the top with the reserved or remaining samna, and bake until golden brown, another 15 to 20 minutes.
&lt;br/&gt;
&lt;br/&gt;8. Remove the pie to a serving platter, and let rest for 10 minutes. Dust the top with confectioners' sugar and make criss-cross lines with ground cinnamon. Serve and, if eating authentically, seat your guests around the bastila and eat with your fingers.

      <description>&lt;div&gt;Does anyone have a recipe for Sfoof that they could provide?  
&lt;br/&gt;
&lt;br/&gt;Sfoof is a Moroccan sweet treat prepared in large quantities for Ramadan or before the birth of a child.
&lt;br/&gt;
&lt;br/&gt;Also, am I correct that Sfoof is actually the edible batter or dough which could also be baked into some sort of cookie or different sweet treat?

      <description>&lt;div&gt;I just started modern standard arabic lessons at a groovy organization downtown san francisco. it's called pacific arabic resources, and it's run by a brilliant bloke named jamal. we started learning to write the arabic alphabet after the first meeting. after i finish this course, i'll be starting moroccan dialect. they offer many dialects, and next session they will be offering a BERBER course. probably the only place on this continent where one can learn berber.&lt;/div&gt;

      <title>Henna anyone?</title>

      <description>&lt;div&gt;I'm a henna artist based in NYC and love Moroccan henna especially.  I lived in Morocco for about a year and a half and fell in love with henna while there.  I came back to the US and taught myself how to do it, and am now a professional henna artist.
&lt;br/&gt;

&lt;br/&gt; Whats up , myself and two friends are going to be in Morocco for 5-6 days.. "love to stay longer... but oh well" Anyone rent a car while there? I've priced out the majors.. hertz avis etc and it all pretty expensive.. more then I expected.

&lt;br/&gt;  We'll be flying into Marrakech I wanted to spend a day or two there, then see fes and drive to the sahara and back to Marrakech. Seems like all this can be done without having to rush it.. but I've never been so I have no idea what driving there is like. anyhow any insight would be great thanks .   &lt;/div&gt;

      <description>&lt;div&gt;I was in Morocco in September of 2002. and I never ever ever ever felt unwelcome or remotely unsafe as an "Amurrican" ok, ok, so i was always mistaken for Japanese. but since I can't speak Japanese I eventually had to admit no, I'm from the States, from New York, their hands would fly to their hearts and they'd look me in the eye and say "welcome" with a sincerity that never ceased to amaze me. (why? we just annhilated afghanistand and were just setting our sights on Iraq when I was there)
&lt;br/&gt;
&lt;br/&gt;Anyway, I met so many friends that were SOO excited about keeping in touch. Over the years and extreme difficulty emailing in broken, misspelled french (while I was there, the bulk of our conversations were in hand gestures and pointing to things) we've slowly lost touch. Sometimes I'd even get letters from people I never met but their uncle had driven me in his taxi to the Todra Gorge and would I be their penpal anyway. I want to see them again so badly. They're from all over the country, and I know in my heart that they don't judge me by the actions of our stupid evil un-elected president. but I wonder sometimes if I were to go back now, how different the experience would be with people that DON'T know me, and how hard/easy would it be to overcome an understandable wariness of westerners in general.
&lt;br/&gt;
&lt;br/&gt;Thoughts on this? Anyone been there recently enough to comment on the general atmosphere? just curious.&lt;/div&gt;

      <title>Your Moroccan Experience</title>

      <description>&lt;div&gt;December '02-January '03 I started out in Agadir, then visited Marrakech and Fez. All were mad adventure, but Fez definitely stands out for me. The blurriest line between hustling and hospitality, I found. A guy I met on the train from Marrakech took me to his friend's home and introduced me... the family ended up hosting me at their small farm on a hillside with awesome views of the old town. The husband/father was an incredible man of remarkable hospitality who would take me into town, deep within the labyrinth medina... there was a sense of love, reverance, dignity and pride I felt in Fez that really took me. I could feel the rich cultural and religious history in the air, the buildings, the art, the people.  
&lt;br/&gt; 
&lt;br/&gt;I'd love to return to Fez. Chefchaoen was were I was headed originally, and from what I hear I'll definitely have to visit next time. Many Moroccans told me the Sahara was their favorite place to visit. Then there are the music festivals... would love to stay for an entire summer and catch 'em all.
